Recipe: Golden Chili

3-IMG_3591If you’re looking for a new chili recipe, this is the one.

It’s chili at it’s finest — all the yummy, spicy, sweet comfort of it — but with a really different flavor.  And no beef.  And no kidney beans.  It’s really unique and completely delicious.

2-IMG_3574These three simple spices make a great flavor combination, but with sausage instead of beef.  And chick peas instead of kidney beans. 

1-IMG_3569This recipe is a Matt-specialty.  He always makes it and I just get to sit back and smell the yumminess going on in the kitchen, then enjoy the prepared dish.  (Another reason this is one of my favorite meals!)

Golden Chili
A spicy sweet chili recipe, like none you've ever tasted!

Ingredients
  1. 2 onions, chopped
  2. 1 tbsp olive oil
  3. 4 cloves of garlic, chopped
  4. 2 jalapenos, de-seeded and minced
  5. 2 tsp ground cumin
  6. 2 tsp chili powder
  7. 1/2 tsp ground oregano
  8. 1/2 to 3/4 lb SWEET Italian sausage (not in casing)
  9. 1/2 to 3/4 lb HOT Italian sausage (not in casing)
  10. 2 cups chicken broth
  11. (2) 15oz cans chick peas, drained
  12. (1) 15 oz can pinto beans, drained
  13. (1) 15 oz can creamed corn
  14. 1 bottle of NON-LIGHT beer (optional)
Instructions
  1. In a large stock pot, heat oil to medium heat, add onions and cook until caramelized.
  2. Add garlic, jalapenos, cumin, chili powder & oregano and cook for another 3-5 minutes.
  3. In a separate pan, brown the sausage until cooked through. Add to onion mixture.
  4. Deglaze the sausage pan with chicken broth and pour into the stockpot with the onions and sausage.
  5. Add one can of chick peas and one can of pinto beans.
  6. In a food processor, blend the second can of chick peas with the can of creamed corn. Add this mix to the stock pot.
  7. Simmer for at least 15 minutes. If the chili is too thick, add chicken broth or one bottle of beer to thin.
Notes
  1. Serve topped with sour cream, shredded cheddar cheese, and green onion.
  2. Note: we usually DOUBLE this recipe.

    is the chicken broth a new addition? I have this recipe from you and it didn’t have that in there…still one of our faves though:)

      We usually make it on the stove top, then transfer it to the crockpot so it can stay warm all day (while we sit on the couch watching football). But you could definitely try to just do it in the crockpot. If you do, let me know how it comes out!
